I am hoping that the hottest days are summer are past us now and that we can begin thinking of cooler weather. Along with cooler weather comes the harvest of apples, apples, apples. I am sure that each of us has our favorite type of apple whether it be Golden Delicious, Red Delicious, Washington State, Rome Beauty or one of the many many other kinds. I wanted to share a couple of my favorite apple recipes with you and hope that you enjoy them throughout this harvest season.

| 1 Cup Vegetable Oil 4 Cups Sliced Peeled Apples 2 Tablespoons Lemon Juice 1/2 Cup Packed Brown Sugar 1/2 Cup Uncooked Quick-cooking or Old Fashioned Oats 1/4 Cup All Purpose Flour 1/4 Cup Margarine or Butter 1 Teaspoon Ground Cinnamon 1/2 Teaspoon Salt 1/8 Teaspoon Ground Nutmeg |
1. Place apples in 1-quart casserole. Sprinkle with lemon juice. Microwave
at HIGH (100%) until apples are tender-crisp, 2 1/2 to 4 minutes. Set apples
aside.
2. Combine remaining ingredients in small bowl. Microwave at HIGH (100%) until hot and bubbly, 1 1/2 to 3 1/2 minutes, stirring after half the cooking time. Spread over apples. Microwave at HIGH (100%) until apples are tender and topping is bubbly, 4 to 6 minutes. |

(Preheat oven to 350 degrees)
1 Vegetable Oil |
Mix oil, eggs, and sugar and beat until creamy. Sift dry ingredients
together and add to oil mixture. Add vanilla extract, apples and pecans.
Mix well. Bake in a greased and floured 9x13 inch pan at 350 degrees for
1 hour or until done.
