It is so close to Christmas that I can almost hear the pitter patter of dear hooves on my roof. LOL..... But I know that everyone must be cooking special treats for their families ....especially since school is out or it is out here ......FOR THREE WEEKS !!! PHEW!  I only have one 12 year old daughter and seriously she is an exceptionally sweet child and yes I am a bragging mother.  Actually her problem after she is out of school more than a day or two is boredom.    I thought this week I would give you some recipes that you and your children could prepare together as an activity and an opportunity to share quality time together.

The first one is very, very easy and one that even younger children could help with.  Actually it doesn't really require a formal recipe.....I have made these with my daughter and she loves them!!....well I do too!!!  

In most grocery stores they have the white and dark chocolate coating squares that you can melt in the microwave and are made especially for coating.  I get some of the white chocolate and regular chocolate as well and melt them in separate bowls.  When the chocolate is melted you may use pretzels, Oreos, and other kinds of cookies and coat them.  Just let them drop them into the chocolate one at a time and turn them so that the entire cookie or pretzel is coated using a fork.  When they are coated lay them on a piece of waxed paper to let the chocolate harden.  Actually as simple as these are to make they make very elegant treats that are great for gift giving as well.

The following recipes are basically the same idea but require a little more of the person supervising the activity.......

BUCKEYES
1 Cup Margarine
1 Cup Creamy Peanut Butter
1 Teaspoon Vanilla Flavoring
1 Box Powdered Sugar
4 Squares Semi-sweet Chocolate
Mix butter, peanut butter, vanilla, sugar in bowl with mixer.  Roll into balls and put on cookie sheet.  Place in freezer just until chocolate is melted.  Then melt chocolate in double boiler.  Remove balls from freezer and dip into chocolate with a toothpick.  Place balls on waxed paper until chocolate is hardened.

PEANUT BUTTER STICKS
1 Cup Creamy Peanut Butter
1 Cup Cooking Oil
3 Tablespoons Granulated Sugar
1 Loaf day old Sandwich Bread

Mix all ingredients except bread together until smooth.  Trim edges from bread.  Cut Bread in 5/8 to one inch strips.  Place in oven at 250 degrees until bread is completely dry.  Dip bread strips into mixture and place on waxed paper to dry.  These are very good but may remain a little sticky after they are made.

DREAM COOKIES
1 Cup Land O' Lakes Butter (softened)
1 Cup Sugar
1 Teaspoon Vanilla
1 Teaspoon Baking Powder
1 Pinch Salt
2 Cups Plain All Purpose Flour (sifted)
1/2 Cup Chopped Pecans
Beat butter until fluffy.  Stir in vanilla, salt, pecans, baking powder.  After mixing, pinch off balls the size of a cherry tomato and place on cookie sheet.  Flatten ball with fork.  Bake at 300 Degrees for approximately 15 minutes.

Chocolate Chip Cookies Mix in a Jar

The cookie jar gift you make and give!

1-1/4 cups all -purpose flour mixed with
½ tsp baking soda and ½ tsp salt
½ cup firmly packed Domino Light Brown Sugar
1/3 cup Domino Granulated Sugar
1 Cup (6oz) semi-sweet chocolate chips
½ cup chopped pecans or walnuts

Note: Recipe fills a 1-quart wide-mouth canning jar. Layer the ingredients in order given, making sure to pack down each layer firmly and clean inside of jar with a dry paper towel after each layer. Decorate lid as desired with fabric, etc.

Attach these instructions to the jar;

1. In large mixing bowl, cream together 2/3 cup softened butter or margarine, 1 egg, 1 tsp water and ½ tsp vanilla until light a fluffy.

2. Add contents of jar and mix well.

3. Drop by rounded teaspoons onto cookie sheets.

4. Bake at 375 degrees for 8-10 minutes or until lightly browned.

Makes about 3 dozen cookies.

Actually, you can use any cookie recipe, just put all dry ingredients in the jar then give directions.
