| Since Thanksgiving is behind us now I guess we will move on toward the Christmas Holidays........my favorite time of year. If any of you have favorite Christmas treats or Christmas Dinner entrees, please forward them to me. I am sure that everyone would like to try special dishes and traditional dishes from the rest of the country too. This week I am sharing with you some of the treats that I grew up with and recipes shared with me through the years by close friends. I hope you enjoy them. |
| 2 Cups Flour (plain) 1 Teaspoon Salt 1 Teaspoon Baking Powder Mix above ingredients together well. Then mix the following ingredients together in a separate bowl:

After mixing well add to the flour mixture and blend well. Add one bag
(12 oz.) of Semi-sweet Chocolate Chips and mix well. Preheat oven to 350
degrees. Lightly grease cookie sheet and dip cookies out with a Tablespoon.
I make these cookies large......about
4 - 5 inches accross after baked. Place cookie sheet in oven. Before cookies are completely browned (almost done in the center but not quite) remove cookie sheet from oven and whop onto counter. This makes the rising action in the cookie fall and the cookie chewey when cooled. I am sure you might feel you need to "try" a recipe first because with the "whopping" on the counter you will find it really is an art. Noisy but oh so good when you eat the cookies. GOT MILK? |
This is a recipe my mother cooked for us growing up. We were very lucky to have a huge pecan tree in our backyard and we all developed a love for all foods with pecans in them.
| 2 1/2 Cups Pecan or Walnut Halves
1 Cup Sugar 1/2 Cup Water 1 Teaspoon Cinnamon 1/2 Teaspoon Salt 1 1/2 Teaspoons Vanilla

Heat nut halves in moderate oven ( 375 degrees ) five minutes stirring once. Butter sides of heavy two quart sauce pan. In Sauce pan combine sugar, water, cinnamon and salt. Heat and stir until sugar dissolves and mixture comes to a boil. Cook without stirring to soft ball stage (236 degrees). Remove from heat; Beat by hand one minute or until mixture just begins to get creamy. Add vanilla and warm pecans. Stir gently until nuts are well coated and mixture becomes creamy. Turn out onto buttered cookie sheet or platter. Separate at once using two forks. Makes 1 Pound |
This recipe is annually served at the Festival of Lights at Callaway Gardens. We go there yearly and the lights displayed there at Christmas time are breathless. A hot cup of cocoa and one of these Gingerbread Men are a wonderful way to end a beautiful evening.
| 2 Cups Granulated Sugar
2 Cups Light Brown Sugar 2 Cups (1 pound) Butter 4 Eggs 3 Tablespoons Molasses 3 Teaspoons Ground Ginger 3 Teaspoons Baking Soda 12 1/2 Cups Cake Flour

Soften butter by beating with mixer. Add sugar and brown sugar. Mix until
smooth. Add eggs and molasses. Sift cake flour, ginger, and baking soda together.
Add sifted ingredients to butter mixture and mix until smooth. Refrigerate
for at least 3 hours.
Roll out dough to 1/4 inch thickness. Cut with floured gingerbread man cutter. Place on prepared cookie sheet and bake at 375 degrees for 15 to 20 minutes. Cool on pan for 10 minutes then remove carefully onto cookie rack to cool. After cool, apply glaze. GLAZE: Sift 1 pound powdered sugar, add 3 to 6 tablespoons water (adjust for desired thickness) and 1 teaspoon lemon extract. Makes approximately 2 dozen large cookies. |

The following recipe is great for making, placing in decorated jars and baskets for friends, coworkers, neighbors, etc.
| 3 Cups Cinnamon Toast Flavored Cereal (such as Golden Graham Cereal)
2 Cups Choclate bear-shaped graham snacks 2 Cups Peanuts 1 1/2 Cups red and green candy coated chocolate
Pieces (M & Ms ofcourse)

In large mixing bowl, combine cereal, graham snacks, peanuts and chocolate pieces. Pour mixture into container with lid. |
