With Thanksgiving Holidays so close, this week I decided to concentrate on side dishes that will compliment the turkey or ham you decide to have with your dinner. Here are some of the favorites of my family.

DIRTY RICE
1 Cup Long Grain Rice
2 Cans Beef Consomme Soup
1 Large Can Sliced Mushrooms
1 Medium Onion
1 Tablespoon Salt
1 1/2 Tablespoons Butter
Saute chopped onion in butter until tender. Mix onions with consomme, rice, mushrooms, and salt in casserole dish. Bake at 400 degrees ntil rice has soaked up liquid (Approximately

45 minutesto an hour).

POTATO CASSEROLE
2 LBS Frozen Hash Browns, thawed
1 TSP Salt
1/2 TSP Pepper
1 Can Cream of Celery Soup
16 OZS Cream Cheese (cubed)
8 oz. Grated Cheddar Cheese
1 Medium Onion Chopped
Bread Crumbs or Cornflakes
1/2 Cup Melted Butter
Mix first seven ingredients. Place in greased 13 x 9 inch casserole. Top with bread crumbs or corn flake crumbs. Drizzle butter over top, if desired. This dish freezes well.

VEGETABLE CASSEROLE
1 Pkg (20 oz.) Frozen Mixed Vegetables
1 cup chopped celery
1 cup chopped onion
1 cup mayonnaise
Pinch of salt and sugar
Ritz Crackers
2 TBSPs Melted Butter
Cook mixed vegetables in small amount of boiling water for

10 minutes. Drain. Add celery, onion, mayonnaise, pinch of salt and sugar; stir. Put in 9 x 13 inch casserole dish. Bake in

350degree oven for 20 minutes. Finely crush 3/4 tubeof Ritz crackersand mix thoroughly with melted butter. Top hot casserole with cracker crumbs and continue baking about

8 minutes.

CORN CASSEROLE
1 Pkg. Yellow Rice
1/2 Stick Butter
2 Cans Mexicorn
1 Can Cream of Celery Soup
2 cups Shredded Cheddar Cheese
Prepare rice according to pakcage directions, adding 1/2 stick melted butter. When rice is cooked, mix with mexicorn, cream of celery soup, and cheddar cheese. Bake at 350 degees 30 minutes.

APPLE PAN DOWDY
1/2 Cup Brown Sugar
1/4 Cup Chopped Walnuts
1/4 cup raisins
3 cups apples, sliced
1/4 cup butter, softened
2/3 cups sugar
1 egg, beaten
2 1/4 Cups Flour (Plain)
4 Tsp Baking Powder
1/2 Tsp Salt
1 Cup Milk
In bottom of buttered baking dish, sprinkle some brown sugar, nuts and raisins. Layer in apples and remaining brown sugar. Prehear oven 350 degrees. Cream butter, add sugar gradually and then add beaten egg. Sift flour, baking powder and salt. Combine creamed mix, dry ingredients and milk alternately till smooth. Pour batter over apples. Bake 35-40 minutes. Turn over on plate with apple side up. Serve with whipped topping.
