| With Thanksgiving and Christmas coming up I thought that these two recipes
were "have to have" recipes. Both of these recipes are from my sister. This
one for baked ham was the recipe she used for a ham we had last year for
the holidays and I cannot describe how delicious it was. The ham we had was
so tender it actually melted in your mouth.
The recipe for the baked potatoes is one I recognize that my mother also used in our growing up years. It is amazing to me how you can use the same ingredients in a recipe ..... only in a different order or procedure and the taste of the food is totally different. These potatoes are so crispy on the outside and so lucious and tender on the inside. Both recipes are simple and I hope you try them for the holidays......they will certainly make your cooking responsibilities much easier. |
| Whole or Half Cured Ham
1- Lg Jar Cherries (red or green) 1- lg Can Pineapple Slices Toothpicks (I prefer the ones with the sharp points)

Line baking pan with aluminum foil. Place ham in baking pan. Cover the
ham with the pineapple slices. Keep the slices from falling off ham by sticking
the toothpicks thru the pineapple slices. Put 2-3 of the cherries in the
middle of the pineapple slices and hold them with the toothpicks also. I
always use all the pineapple and cherries.
Pour the pineapple juice and the cherry juice all over the ham. Make a cover out of aluminum foil sealing the top and sides. Bake at 300 to 350 degrees. Baste the ham with the juice from the bottom of the pan every 30-45 minutes. Bake 30 minutes for every pound of ham. NOTE: I even put pineapple slices & cherries as far under the sides of the ham as i can get them. For Christmas I use red and green cherries. If you only have a half of a ham the small jars and small cans of pineapple are perfect. Ofcourse, it you have a large ham you will need additional pineapple and cherries. |

| Irish Potatoes (as many as your family will eat)
Cooking Oil or Bacon Drippings Salt Pepper

Peel potatoes and cut in quarters depending on the size. I have had some
small potatoes that I just cut in half. Place on baking pan, I usually put
aluminum foil on a cookie sheet with sides so that the oil won't run off
and put the potatoes on it. Pour 1 teaspoon oil over each potato (or enough
to coat the outside) and then salt/pepper to taste. If your diet restricts
the use of salt they are also great without it.
Bake at 350 in oven. Baste with the oil from the pan every 20-30 minutes until done. |
