| I am not sure what the weather is like in the entire United States, but for Georgia, it could not be more beautiful weather. The afternoons are sunny but the temperature is in the 80s with a constant breeze blowing. This is my favorite weather to cook outdoors on the grill. Following is a recipe which I received for Brunswick Stew which would be a perfect accompaniment for any backyard cookout. |
| 1 Whole Chicken (boiled and cut into bite size pieces) 1 LB Ground Beef (browned and drained) 1 Onion (chopped and browned) 2 Cans Cream Style corn 1 Can English Peas 1 Large Can Crushed Tomatoes or 1 Large can whole tomatoes cut up 2 Tablespoons Vinegar 1 Tablespoon Sugar 1 Small bottle Catsup |
Mix and Cook above ingredients slow, stirring often.
**NOTE I also add a can of Campbell's Tomato Soup

The following two recipes are from a close friend of mine who has a perfect sense of what herbs and spices to blend with what meats or vegetables. These two recipes he gave to me are absolutely delicious second only to his roast beef recipe which I regret to say I never got. I hope you enjoy them as much as I.
4 - 5 Cucumbers (peeled and sliced thinly) 4 or 5 cloves of Garlic (peeled and chopped finely) salt to taste |
Mix above ingredients well, cover and refrigerate overnight.
Remove from refrigerator and drain juices well. |
| 1/4 Cup Italian Dressing 5 Tablespoons Mayonnaise 1/4 Cup White Vinegar 1 Teaspoon Dill Weed 1 Teaspoon Celery Seeds 1/4 Pint Sour Cream |
Mix above ingredients well and pour over cucumbers. Marinate cucumbers several hours before serving. |
The following recipe was also shared with me by the same friend. I think that someone who did not want a strong garlic taste might prefer this one.......
6 Tablespoons Sugar 2 Teaspoons Salt 1/4 Cup Vegetable or Olive Oil 1/2 Cup White Vinegar 3/4 Cup Water 1/4 Teaspoon Garlic Powder 1/2 Teaspoon Onion Powder 1/4 Teaspoon Paprika 1/4 Teaspoon Dill Weed 1/4 Teaspoon Basil |
Score the sides of the cucumbers with the tines of a fork and slice thinly. Slice Purple Onion thinly and separate into "rings". Mix above dressing ingredients and pour over cucumbers and onion and marinate overnight. |
