Since Thanksgiving is over and now we are all looking forward to Christmas,
what better way to get you and your familiy in the "Christmas mood" than
lots of goodies and Christmas surprises. I hope along from now until Christmas
to include some recipes that you may be able to use for Christmas gifts.
I hope you enjoy my Christmas favorites and don't forget if there is a special
recipe you are looking for, let me know and I will try to locate it or something
as similar as possible. So, from me to you, happy Christmas cooking........

PECAN SQUARES
1 Stick Margarine
1 LB. Brown Sugar
3 Eggs
1 Tsp. Vanilla
1 1/2 cups All-Purpose Flour
1/4 Teaspoon Salt
1 1/2 Teaspoon Baking Powder
1 1/2 Cups Chopped Nuts

Cream margarine and sugar; add eggs and vanilla extract; mix well. Sift
together dry ingredients; add to mixture. Stir in nuts. Pour into greased
13 x 9 inch pan. Bake at 350 degrees for 35 minutes. Cool in pan. Cut into
squares and roll in confectioners sugar. |

REESE'S PEANUT BUTTER CUPS
2 cups peanut butter (crunchy)
1 LB confectioners sugar
1 tsp vanilla extract
3/4 cup brown sugar
1 stick margarine
Icing
12 oz bag chocolate chips
1 stick margarine
|
Combine first 5 ingredients; spread in long pan. Pack tightly. For icing,
melt chocolate chips and margarine together; spread over top. Let cool; cut
into squares. |

GEORGIA PEANUT BRITTLE
3 Cups Sugar
1 Cup Water
1 Cup White Corn Syrup
1 tsp Salt
3 cups raw peanuts
1 tsp Vanilla Extract
1 tsp soda
2 tsp butter

Cook first 4 ingredients until crack stage (300 degrees to 310 degrees).
Syrup forms brittle threads when tested in water. Add peanuts. Cook until
peanuts are done (light brown in color). Remove from heat; add vanilla extract,
soda and butter. Stir vigorously; pour quickly onto marble or baking sheets
(it is better to pour into 2 or 3 batches). Stretch thin and store in air
tight container. |

AMAZING COOKIES
2 Egg Whites
2/3 Cup Sugar
1/2 Teaspoon Vanilla Extract
1 6 oz bag Chocolate Chips
1 cup chopped nuts

Grease 2 cookie sheets. Heat oven to 350 degrees. Beat egg whites until
stiff; add sugar; beat until very stiff. Fold in vanilla extract, chocolate
chips, and nuts. Drop by spoon on cookie sheets. Turn oven off. Put cookies
in oven for 2 hours or overnight. DO NOT OPEN OVEN. |

CHEESE CAKE SQUARES
1 Stick Margarine
1 Box Duncan Hines Yellow Cake Mix
1 Egg beaten
Broken Pecans
3 Eggs beaten well
1 LB confectioners sugar
1 (8oz) Pkg. Cream Cheese, softened
|
Melt margarine in 13 x 9 pan. then mix in cake mix and beaten egg. Pat
mixture over bottom of pan. Sprinkle over this the broken pecans. Mix remaining
ingredients thoroughly. Pour over first mixture; bake in 324 degree oven,
35 to 45 minutes. |
