Aromatic Golden Rice

1 cup (250 ml) low-sodium chicken stock
1 cup (250 ml) water
1 cinnamon stick
1 bay (laurel) leaf
1/4 tsp (1 ml) ground cardamom
1/4 tsp (1 ml) ground turmeric or saffron
1 cup (250 ml) long-grain rice
1/4 cup (60 ml) sliced almonds, lightly toasted (optional)

Combine chicken stock, water, and seasonings in a pot and bring to a boil over moderate heat. Stir in the rice and return to the boil. Reduce the heat and simmer covered over low heat for 20 minutes. Remove from heat and allow to sit covered for 10 minutes. Fluff with a fork and serve topped with toasted almonds if desired. Serves 4 to 6.

 

Lemon Poppy Seed Cake

2 cups (500 ml) all-purpose flour
3/4 cup (180 ml) sugar
1 Tbs (15 ml) poppy seeds
2 tsp (10 ml) baking powder
1/4 tsp (1 ml) baking soda
1/4 tsp (1 ml) salt
3/4 cup (180 ml) applesauce
1/4 cup (60 ml) fresh lemon juice
2 Tbs (30 ml) vegetable oil
2 Tbs (30 ml) corn syrup
1 tsp (5 ml) grated lemon rind
Whites of 4 eggs

Combine the flour, sugar, poppy seeds, baking powder, baking soda, and salt in a mixing bowl. Combine the applesauce, lemon juice, vegetable oil, corn syrup, and lemon rind in another bowl. Stir the liquid ingredients into the dry ingredients just until combined. Beat the egg whites until they form stiff peaks and fold into the flour mixture. Pour into a lightly greased 9-inch (23 cm) round cake pan and bake in a preheated 350F (180C) oven for 30 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan. Serve warm, chilled, or at room temperature. Serves 8 to 10.

Benne Wafers

2 cups (500 ml) all-purpose flour
1 tsp (5 ml) salt
Cayenne pepper to taste
3/4 cup (180 ml) vegetable shortening
1/4 cup (60 ml) (approx.) ice water
1 cup (250 ml) lightly toasted sesame seeds

Combine the flour, salt, and cayenne pepper in a mixing bowl. Cut in the shortening and add enough ice water to form a dough similar to pie pastry. Stir in the sesame seeds. Roll the dough very thin and cut into small rounds, about 1 inch (2.5 cm) in diameter. Place on a baking sheet and bake in a preheated 300F (150C) oven until crisp, 20 to 30 minutes. Makes 3 to 4 dozen

SWEET N' SPICY KIELBASA

1 cup packed brown sugar
4 tablespoons spicy mustard
1 small onion, finely chopped
2 pounds smoked kielbasa, cut into 1/4 inch pieces

Combine brown sugar, mustard and onion in crock pot, add kielbasa, stirring to evenly coat. Cover and cook on low heat for 2 1/2 to 3 hours. Stir occasionally.

Tomato Turkey
1lb Turkey stir-fry strips

1 250g tin chopped plum tomatoes

Squirt of tomato Puree

1 medium onion, chopped roughly (I like to have thick bits to chew on)

Dried Chilli flakes (to taste)

In a frying pan over a medium heat, soften the onion in some butter or oil. When golden and starting to burn a little at the edges, add the turkey and brown all over. Add the tin of chopped tomatoes, and some tomato puree to thicken the juices. Throw in some dried chilli flakes - this is down to personal taste. I like a little kick to mine, but not too hot. Turn down the heat, cover, and simmer for about 20 minutes, stirring occasionally. The tomato paste may burn a little - this adds to the taste.

Serve over rice or pasta.

 

Apple Toad in a Hole

6 German sausages, ready to eat
32 oz. applesauce
4 oz. sliced cheddar or American cheese

Lay sausages in a 9x9 baking dish. Cover with applesauce. Top with sliced cheese. Bake at 350 for 25 minutes, or until sausages are warm and cheese is browned.

Five Cup Salad

1 cup sour cream
1 cup coconut
1 cup chunk pineapple (drained, discard juice)
1 cup miniature marshmallows
1 cup mandarin oranges (drained, discard juice)

Mix together all ingredients,(easier if you mix in the order given), refrigerate for at least 1 hour for flavors to blend. Even better the next day.
