ITALIAN ORANGE ROUGHY

1 LB Orange Roughy Fillets
1/2 cup tomato juice
2 tablespoons white vinegar
1 envelope Italian salad dressing mix
1/4 cup chopped green onions
1/4 cup chopped green pepper


Place fish fillets in a shallow 2 qt. microwave-safe dish, positioning the thickest portion of fish toward the outside edges. Combine tomato juice, vinegar, and salad dressing mix; pour over fish. Cover and refrigerate for 30 minutes.

Sprinkle with onions and green pepper. Cover and microwave on high for 3 minutes. Turn fillets over; cook 2-4 minutes longer or until fish flakes easily with a fork. Let stand, covered for 3 minutes.

 

A south of the border flavor goes with just about any meal.  You can try this cornbread right in your own home .  No need to plan a trip to Mexico just for their excellent cornbread. 

MEXICAN CORNBREAD

1 1/2 cups self-rising cornmeal
2/3 cup cooking oil
1/2 bell pepper (chopped)
1 can green chili pepper (chopped)
1 cup buttermilk
1 small can cream corn
Dash garlic salt
2 eggs
2 cups grated sharp cheddar cheese

Mix all ingredients except cheese. Pour half of mixture in a greased pan. Top with 1 cup cheese. Pour the other half of mixture on top of cheese and sprinkle remainder of cheese on top. Bake 350 degrees about 40 minutes.

Cheese Potatoes

12 medium red (new) potatoes
1 cup or more grated medium cheddar cheese
1 stick melted butter
8 slices crumbled cooked bacon
salt and pepper to taste

Wash, but don't peel potatoes. Cut into thick slices (about

1/2 inch). Cook in water until done; drain. In Pyrex bowl layer potatoes, cheese, bacon and melted butter. Repeat. Season with salt and pepper. Heat in oven until cheese is melted and casserole is bubbly.

SPICY GREEN BEANS

1 (16 oz) can French style green beans (reserve liquid)
1 (2.8 oz) can french fried onion rings
1 (10 3/4 oz) can cream of mushroom soup
1/2 cup bean liquid (reserved from beans)
1/2 cup or more sharp grated cheddar cheese

Alternate layers of well drained beans and onions in baking dish. Mix mushroom soup with 1/4 cup of bean liquid and pour over vegetables. Sprinkle with cheese. Bake in moderate oven (350 degrees) about 30 minutes, until heated throughout.

CONGEALED SLAW

1 (3 oz) package lemon gelatin
1/4 cup sugar
1 cup boiling water
1/2 teaspoon celery seed
1 teaspoon black pepper
1/2 cup mayonnaise
2 tablespoons vinegar
2 cups finely grated cabbage

Dissolve gelatin and sugar in boiling water. Add seasonings, mayonnaise, and vinegar; chill slightly. Add cabbage and pour into greased mold or 8x8 dish. Refrigerate until congealed. Very unusual flavor.
