It seems almost the entire country is caught up in this heat wave I guess you would call it. I know that everywhere seems to be hot. This week I wanted to share with you recipes that were not necessarily for picnics or cookouts but were east to prepare and "cool" type foods. I hope you enjoy them.

HOMEMADE ICE CREAM

1 (14 oz) can sweetened condensed milk
3 (12oz) cans evaporated milk
1 cup sugar
3 (10oz) cartons strawberries
1 (10oz) can pineapple, crushed and with juice
3 ripe bananas, cut up
1 bottle cherries, halved
1 cup chopped nuts
6 tablespoons bottled lemon juice

Mash bananas, quickly pour lemon juice over bananas. Combine remaining ingredients. Pour ingredients into can of homemade ice cream freezer. If the can is not full, add regular milk to fill it. Freeze in ice cream freezer according to ice cream freezer directions.

 

PECAN CHICKEN SALAD

5 cups cooked, chopped chicken
3 hard cooked eggs, chopped
1 cup chopped celery
1 cup chopped sweet pickle
1 cup chopped, toasted pecans
1 cup halved green seedless grapes
1 (8oz) can water chestnuts, drained and chopped
1 (10oz) can pineapple tidbits, drained
1 (2oz) jar pimiento, diced
1 tablespoon lemon juice
1 1/2 cups mayonnaise

Combine all ingredients and mix well. Serve on lettuce leaf. If mixed ahead, refrigerate until serving time.

CREAMY CHOCOLATE PIE

1 (4oz) pkg Bakers'
German sweet chocolate
1/3 cup milk
2 tablespoons sugar
1 (3oz) pkg cream cheese, softened
1 (8oz) carton cool whip
1 (8 inch) graham cracker crust

Heat chocolate and 2 tablespoons of milk in microwave until chocolate is melted. Beat sugar into cream cheese; add remaining milk and chocolate mixture and beat until smooth. Spoon into graham crust. freeze until firm (about 4 hours)

SEA ISLAND SALAD

1 (8 oz) box macaroni
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup chopped onion
1 cup diced ham, turkey, or
1 (6oz) can tuna, drained
3/4 cup cubed cheese
2 tablespoon chopped green pepper
1/2 cup cubed or diced pickles
1/4 cup chopped celery
1 (15oz) can small, early June English peas, drained

Cook macaroni according to package directions. Drain and stir in sour cream, mayonnaise, onion, meat, cheese, pepper, pickles and celery. Add peas last. Mix together well, chill and serve on lettuce.

SHERBET SALAD

1 (3oz) package lemon Jello
1 (3oz) package orange Jello
1 cup boiling water
1 pint orange sherbet
1 (17 oz) can fruit cocktail, drained
1 (8 oz) carton cool whip

Dissolve both packages of Jello in the boiling water. Add the sherbet and dissolve. Add the fruit cocktail and cool whip. Stir to blend. Turn into a mild and chill. Use a large mold or casserole dish -- jells rapidly.
