With Labor Day getting closer and closer, I wanted to share some recipes
with you for a picnic or get-together (we call em that in the south). So,
from now until Labor Day this column will be directed toward recipes and
family "get-togethers".
CHERRY COKE ICE CREAM
2 cups Cherry Coke
dash salt
2 cans evaporated milk (large)
2 cups sugar
1 pint whipping cream
1 jar cherries, chopped
milk, if needed to fill freezer

Mix all ingredients together, except the milk, and pour into a 4 or 5
quart ice cream freezer. Add milk to reach the "fill line." Freeze according
to the freezer directions. |

HOMEMADE PEACH ICE CREAM
1 1/2 cups sugar
2 tablespoons flour
1/2 teaspoon salt
3 eggs, beaten
1 quart whole milk
1/2 pine whipping cream
1 tablespoon vanilla extract
6 cups chopped peaches
1 cup sugar

Combine the sugar, flour, and salt; add eggs and blend well. Add milk and
cook slowly until slightly thickened. Let Cool. Add the whipping cream, vanilla,
and sweetened peaches. Pour into freezer and freeze. Yield: 1 gallon |

CHOCOLATE ICE CREAM
1 1/4 cups sugar
8 egg yolks, beaten
4 ounces sweet chocolate, grated
1 quart milk, scalded
1 teaspoon vanilla extract
1 cup heavy cream

Mix the sugar, egg yolks, and chocolate in top of double boiler. Add
milk and cook, stirring constantly, about 3 to 5 minutes. Cool. Add vanilla
and cream. Chill. Pour into ice cream freezer can and freeze.
Yield: 1/2 Gallon |

This recipe is a favorite of mine. I think it probably was the first recipe
I prepared when I began cooking in Home Economics in Junior High School.....many,
many years ago. It is very easy and absolutely delicious......
CONGO SQUARES
2/3 cup shortening
1 box light brown sugar
3 eggs
2 3/4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped nuts (I prefer pecans)
1 (6 oz. package) chocolate bits

Melt shortening over low heat; add brown sugar and beat well. Let cool.
Add eggs and blend. Let cool. Add eggs and blend. Combine flour, baking powder
and salt and add to sugar mixture. Mix well. Add nuts and chocolate bits.
Spread in a greased 15x12x1 inch pan and bake at 325 degrees for 30 minutes.
Cool and cut into squares.
Yield: about 4 dozen |

PEANUT OATMEAL RAISIN ROUNDS
1 cup sugar
1 cup firmly packed brown sugar
1/2 cup margarine or butter, softened
1/2 cup peanut butter
1 teaspoon vanilla
3 eggs
1 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 cups rolled oats
1 cup raisins
1/2 cup wheat germ

Heat oven to 350 degrees. Lightly grease cookie sheets. In large bowl,
combine sugar, brown sugar, margarine, peanut butter, vanilla and eggs; beat
until light and fluffy. Lightly spoon flour into measuring cup; level off.
Add flour, salt and baking soda; mix well. Add oats, raisins and wheat germ;
mix well. Drop by rounded teaspoonfuls 3 inches apart onto greased cookie
sheets.
