This week I want to share with you some other recipes that will be good to cook out on the grill or to take as a side dish for what you cook on the grill........

SIMPLE BROCCOLI  SALAD

2 cups broccoli florets
4 bacon strips, cooked and crumbled
1/4 cup chopped sweet red pepper
1/2 cup mayonnaise
2 tablespoons sugar
1 tablespoon vinegar

In a bowl, combine broccoli, bacon and red pepper.  In another bowl, stir the mayonnaise, sugar and vinegar until smooth.  Pour over broccoli mixture and toss to coat.

 

Here is a recipe that almost everyone likes.....a great snack hot or cold and great for taking to cookouts or picnics. 

HOOTER'S BUFFALO CHICKEN WINGS
(adjust ingredients for amount of wings you want to make)

1/4 cup margarine
1/4 cup Red Devil Hot Sauce
1/4 teaspoon granulated garlic
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wings, tips removed
Vegetable oil for frying

 

 

Heat oil in a deep fryer to 350 degrees. Melt margarine and mix in hot sauce and garlic. Set aside. Combine the flour, paprika, cayenne pepper, and salt in a small bowl. Place wings in a large bowl and sprinkle the flour mixture over them, coating each wing evenly.

Put the wings in the refrigerator for 60-90 minutes.

This will help the breading to stick to the wings when fried. (This is an excellent trick for all breadings)

Put all the wings in the hot oil and fry about 10 minutes or until they turn a dark brown. Remove from the oil and place in a large bowl. Add the hot sauce and stir, coating all of the wings evenly.

Serve with celery sticks, carrot sticks and blue cheese or your favorite dressing.

Rosemary/Herb Chicken Wings

(Perfect as a take along for snacking while you grill)

2        tablespoons  olive oil
2        tablespoons  butter
2        tablespoons  finely chopped shallots
2        teaspoons  dried rosemary
1/2     cup  lemonade
1         teaspoon  black pepper
1         teaspoon  salt
12       chicken wings

 

 

 

 

Preheat oven to 425 degrees. In a small saucepan, heat oil and butter over medium heat. Add shallots and rosemary and cook 2 to 3 minutes. Add lemonade, pepper, and salt. Simmer over low heat for 6 to 8 minutes or until slightly reduced and syrupy. Cool slightly.

Meanwhile, cut chicken wings into three pieces, discarding wing-tip joint.

Place wings in shallow pan and coat well with sauce. Bake in oven until skin is golden brown, about 30 minutes. Serve with rice or as hors d'oeuvre.

Makes 20 to 24 pieces.

DIJON MARINATED CHICKEN

Dijon Marinade
2 tablespoons chopped green onions
1/4 cup oil
2 tablespoons white wine vinegar
2 tablespoons Dijon or prepared mustard
1 garlic clove, minced

Chicken
2 whole boneless, skinless, chicken breasts, halved.


In 12x8 inch (2 quart) baking dish or large plastic bag, combine all marinade ingredients; mix well.  Add chicken; turn to coat.  Cover dish or seal bag.  Refrigerate 2 to 6 hours, turning occasionally.

Heat grill.  when ready to barbecue, oil grill rack.  Drain chicken, reserving marinade.  Place chicken on gas grill over low heat or on charcoal grill 4 to 6 inches from medium coals.  Cook 20 to 30 minutes or until chicken is fork tender and juices run clear, turning occasionally and brushing frequently with reserved marinade.  Discard any remaining marinade.

TERIYAKI SALMON
1/2 cup vegetable oil
1/4 cup lemon juice
1/4 cup soy sauce
1 teaspoon ground mustard
1 teaspoon ground ginger
1/4 teaspoon garlic powder
4 salmon steaks


In a large resealable plastic bag or shallow glass container, combine the first six ingredients; mix well.  Set aside 1/2 cup for basting and refrigerate.  Add  salmon to remaining marinade; cover and refrigerate for 1 1/2 hours, turning once.  drain and discard marinade.  Place the salmon on a broiler pan.  Broil 3-4 inches from the heat for 5 minutes.  Brush with reserved marinade; turn and broil for 5 minutes or until fish flakes easily with a fork.  Brush with marinade.

This recipe I think can easily be cooked outside on the grill.
