Since we are about in the middle of summer and I am not sure about where you are, it is very warm here in Georgia and the humidity is at an all time high, I thought I would share some light recipes with you that are a few of my favorites for summertime.  I hope you enjoy them.

I really don't have a written recipe for this first favorite so it will take some of your imagination in preparing it.  But believe me if you have never had a salad like this ....... you have truly missed a treat.

FRIED CHICKEN SALAD
Begin by preparing a regular salad with your favorite salad ingredients....

I start with a bed of lettuce.....iceberg lettuce is fine but when I want to pamper myself I like to use several types of leaf lettuce and maybe some spinach leaves.  Then I add thinly sliced carrots, fresh tomatoes (if available), green onions, thinly sliced celery, small broccoli flowerettes, slices of boiled egg, slices of cucumber, just to give you some ideas.  Then I deep fry some breaded chicken breasts or chicken fingers or chicken strips.  When they are golden brown I cut them in bite size pieces and scatter them over the top of the salad.  Finish with your favorite salad dressing.....I love Kraft Tangy Tomato and Bacon.  Have a nice glass of iced tea and ......we are talking heaven.... I hope you will try this and I hope you will like it as much as I.

 

 

CURRIED CRABMEAT SPREAD
1 pound crabmeat     (fresh or canned), drained
1/2 cup mayonnaise
4 tablespoons sour cream
4 teaspoons grated onion
2 tablespoons parsley
2 teaspoons curry powder
salt and pepper to taste

Shred the meat and blend with remaining ingredients.  Serve with thin buttered crisp toast, crisp crackers or Melba rounds.

CHEESE SANDWICHES

(great for picnics)

2 cups shredded sharp cheddar cheese
1/3 cup chili sauce
3/4 cup mayonnaise
White or whole wheat bread
1/2 cup chopped stuffed olives
1/2 cup chopped pecans
1 teaspoon Worcestershire

Mix all ingredients except bread together well and chill before using.  Serve as sandwiches cut into fourths for parties or as a whole sandwich for lunch.

  

LEMONADE CONCENTRATE

(great for picnicking, cooking out, or camping)

1 1/2 cups sugar
1 quart water
1 1/2 cups freshly squeezed lemon juice

Combine sugar and water in a saucepan; bring to a boil.  Reduce heat, and simmer 5 minutes, stirring until sugar dissolves.  Cool.  stir in lemon juice.  Cover and chill.  To serve lemonade, use equal portions lemonade concentrate and water.  Serve over ice.

KOOL-AID PUNCH

2 packages cherry Kool-aid
1 package orange Kool-aid
1 46 oz. can pineapple juice
1 teaspoon almond flavoring
1 (2 liter) bottle ginger ale

Mix Kool-aid as directed on package.  Add pineapple juice and almond flavoring.  Chill until ready to serve.  Add ginger ale at the last minute.
