A Messy Kitchen Is A Happy Kitchen... And This Kitchen Keeps Smiling

I hope that everyone is enjoying this month......which is not commonly known to be this wet.....I thought that most of the rain was in April. But in-between showers I hope you have found the time to try some of the cooking out recipes I have sent. I have a few more scrumptious recipes this week I hope you will equally try and enjoy.

GRILLED STEAKS WITH CHEDDAR-ONION BUTTER

1/4 cup butter or margarine, softened
1/4 cup sliced green onions
1/2 teaspoon dry mustard
2 oz. (1/2 cup) finely shredded Cheddar cheese

STEAKS:

4 beef sirloin or T-bone steaks (1 inch thick)
1/4 teaspoon salt
1/4 teaspoon coarse ground black pepper

GRILL DIRECTIONS:

Heat grill. In small bowl combine all butter ingredients; mix well. Set aside.

When ready to grill, place steaks on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 15 minutes or until of desired doneness, turning once. During last minute of cooking time sprinkle steaks with salt and pepper. Top with 1/4 of cheddar-onion butter.

FOIL-WRAPPED POTATOES

4 medium potatoes, cubed (4 cups)
1/2 cup chopped onion
4 teaspoons chopped fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
4 tablespoons margarine or butter

GRILL DIRECTIONS

Heat grill. Cut four 18 x 12 inch pieces of heavy duty foil. Place 1/4 of potatoes and onion on each piece of foil. Sprinkle each with 1/4 of parsley, salt and pepper; top each with 1 tablespoon margarine. Wrap each packet securely using double fold seals, allowing room for heat expansion.

When ready to barbecue, place foil packets on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 45 to 55 minutes or until potatoes are tender, rearranging packets several times during cooking.
