Moroccan Stew
Ingredients

1 T Olive Oil
2 garlic cloves
1 med onion cut into 1/2 inch pieces
1 t Curry powder
1 t Ground Cumin
1 can (10-15 oz) garbanzo beans (rinsed and drained)
1 can (14 1/2 oz)  stewed tomatoes
1 can (14 - 14 1/2 oz) vegetable broth or chicken broth ( 1 1/4 cups)
2 large carrots , sliced diagonally into 3/4 inch  slices
1 box (10 oz) couscous or 4-5 cups rice
<1 med zucchini (8 oz)  cut lengthwise into quarters, then cut cosswise into 1 inch chunks
1/3 cup golden raisins
2 T chopped fresh cilantro leaves


 Directions
 
Prep: 15 min 
Cook about 25 min 
Makes about 5 1/2 cups main dish servings
 
1.  In nonstick 12 inch skillet, heat oil over med high heat.  Add onion and cook 5 minutes or until lightly browned, stiring frequently.  Stir in garlic, curry powder, and cumin and cook 30 seconds stirring.  Add beans, tomatoes, broth and carrot; heat to boiling.  Reduce heat to medium; cover skillet and cook
5 minutes.
 
2.  Meanwhile, prepare couscous or rice according to label directions.
 
3.  Into bean mixture in skillet, sti8r zucchini and raisins; cover and cook 5 minutes or until zucchini is tender, stirring occasionally.
 
4.  To serve, fluff couscous or rice  with two forks.  Divide couscous or rice among 4 large shallow bowls.  Spoon vegetable stew over couscous or
rice  ; sprinkle with chopped cilantro.

Hot Cran-Apple Cider

Ingredients :
2 quart of apple cider
1-1/2 quarts cranberry cocktail
1/4 cup brown sugar
3-inch cinnamon sticks
1-1/2 teaspoons whole cloves


Preparation :
Heat to boiling; reduce heat and simmer 15 to 20 minutes. Strain. 25 servings (about 1/2 cup each)

Mixed Vegetable and Ground Beef Casserole
 Ingredients

1 lb. ground beef
1/2 c. chopped onion
3/4 c. water
1/4 tsp. pepper
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1 (9 oz.) pkg. green giant
Frozen mixed vegetables, thawed
8 oz. (2 c.) shredded Mozzarella cheese
1 (10 oz.) can Hungry Jack Biscuits
1 tbsp. margarine
1/2 tsp. dried oregano leaves, crushed



 Directions


Heat oven to 375 degrees.
Grease 12x8 inch (2 quart) baking dish.
In large skillet, brown ground beef and onion; drain. Stir in water, pepper, tomato sauce, tomato paste and simmer for 15 minutes, stirring occasionally. Remove from heat; stir in vegetables and 1 1/2 cup of the cheese.
Spoon mixture into greased baking dish. Separate dough into 10 biscuits. Separate each biscuit into 2 layers. Place biscuits near outer edge of hot meat mixture overlapping slightly. Sprinkle remaining cheese in center and around edge. Gently brush biscuits with margarine; sprinkle with oregano.
Bake at 375 degrees for 22 to 27 minutes or until biscuits are golden brown.
6 to 8 servings.

Meatloaf
 Ingredients

2 lbs. ground round steak
2 eggs
1 1/2 c. bread crumbs
3/4 c. ketchup
1 tsp. Accent
1/2 c. warm water
1 pkg. Lipton's onion soup mix

 Directions

 
Mix thoroughly. Put into loaf pan, cover with 2 strips of bacon, if you like that flavor. Pour over all 1 (8 ounce) can tomato sauce. Bake 1 hour at 350 degrees. Serves 6.

Coffee Eggnog
Ingredients :
2 eggs, separated
1/3 cups sugar
1/3 cup instant coffee
Dash salt 1 tablespoon vanilla extract
2 cups milk, chilled
1 cup heavy cream
1 cup whipped Shaved unsweetened chocolate

Preparation :
In a small bowl using an electric mixer, beat at high speed, beat egg whites until soft peak forms. In large bowl, beat egg yolks until lemon colored. Gradually beat in coffee, salt, vanilla, milk, and 3/4 cut water. Stir in egg-white mixture and whipped cream; mix well. Serve well chilled, with chocolate sprinkled over each serving. Makes 12 servings.

Pumpkin Crumb Cake
 Ingredients

1 box yellow cake mix
1/2 c. melted butter or margarine
1 egg

FILLING:
1 can pumpkin (29 oz.)
2 eggs
2/3 c. evaporated milk
1/2 c. brown sugar
2 tsp. cinnamon

Crumb Topping
1 c. reserved cake mix
1/2 c. sugar
1/4 c. margarine or butter
1 tsp. cinnamon


 Directions

Measure 1 cup of cake mix; set aside for topping.

Combine the remaining cake mix, melted margarine and egg. Press mixture into greased 9 x 13 inch cake pan (press hard).
Combine the above and pour over cake mixture in pan. Combine all ingredients for crumb topping. Sprinkle over filling. Bake 45-50 minutes at 350 degrees. Serve with Cool Whip.
